Ingredients:


  • 1 cup oat flour (certified gluten-free oats)

  • 1/4 cup almond meal

  • 1/2 cup coconut sugar, cane sugar or monkfruit sweetener

  • 1/4 cup gluten-free all-purpose flour

  • 3/4 cup vegan milk (soy, oat, ect.)

  • 2 tsp culinary matcha powder (this one is the best price)

  • 1 ripe banana

  • 1 tbsp baking powder

  • 2 tsp vanilla extract

Directions:


  1. Preheat and Prepare: Preheat your oven to 350 degrees F. Grease the muffin pan, use a non-stick pan, or line with muffin liners.

  2. Blend Wet Ingredients: In a blender, combine the ripe banana, unsweetened vanilla macadamia milk, matcha powder, vanilla extract, and sugar. Blend on high until the mixture is smooth and well combined.

  3. Combine Dry Ingredients: In a large bowl, whisk together oat flour, almond meal, gluten-free all-purpose flour, and baking powder.

  4. Mix Wet and Dry Ingredients: Pour the blended wet mixture into the bowl with the dry ingredients. Stir until well combined with no lumps.

  5. Fill Muffin Pan: Grease the muffin pan or use liners. Spoon the batter into each muffin cup, filling them about 3/4 of the way to the top. This recipe makes approximately 9 muffins.

  6. Bake: Bake for about 22 minutes or until a toothpick poked into the center comes out clean. Keep an eye on them to avoid overcooking!

  7. Cool and Serve: Allow the muffins to cool in the pan for about 30 minutes before taking them out. This helps them set and become easy to handle.

  8. Top it Off: Garnish with candied nuts, or topping of choice!
